We apologize that there are no pictures of us cooking the food, or individuals actually enjoying the food during the party. In the future we promise to photograph our hot mess selves in the kitchen…for this party, its probably better you do not see the various struggles we had behind the scenes.
Some of Our Genius Rx Tips for Maegan’s Birthday Rager:
· ½ shot of pear vodka topped with champagne and a pear slice is deceptively strong, super-tasty, and low-calorie. Mixing a clear (and flavored) alcohol with champagne is a smart way to make a stiff cocktail without sacrificing taste. Once the vodka ran out, we kept the champagne flowing, for 90 calories per glass (you can also try a splash of St. Germain Elderflower liquor…a little pricey but trust us, it’s delish).
· Shh…don’t tell anyone, but there’s squash in your mac n’ cheese. We cut out the butter and cream, gave you some vegetables (you’ll thank us later) and slashed the fat of the cheese in half. Drizzling white truffle oil on top gives the illusion of a creamier, more satisfying dish without actually doing it.
· Dark chocolate is dramatically lower in total and saturated fat than white chocolate. Same goes for ground turkey compared to chuck. You’re welcome.
· Ever noticed how guac gets a bad rap? We think that’s stupid. Avocados are high in monounsaturated fatty acids (heart-healthy, tell your grandparents), choc full o’ vitamin E (An antioxidant! Haven’t you read about those somewhere…?) and a downright delicious fruit/vegetable. If you heed our advice and use 1.5 tablespoons on your turkey burger, you’re only adding about 50 extra calories while amping up the taste. The only time you get into trouble is when you dive head first into a bowl of the stuff with fried tortilla chips. What, you’ve never had the munchies at Caliente Cab?
· Speaking of things that are fried: We’re saving you from fried-food coma by sautéing the coconut shrimp rather than deep frying in vegetable oil. Our favorite part about this healthy (and outrageously delicious) recipe? After marinating, it takes no more than 10 minutes in a sauté pan.
· Don’t give up on the idea of ice-cream cake: It’s festive, everyone loves it, and it reminds us of our childhood in Carvel. Just switch to ice cream sandwiches instead, a wonderfully pre-portioned version. Swapping frozen yogurt or gelato for ice cream gets rid of sugar and fat and still gives you that satiating taste of crumbly crust (ours is made from whole wheat flour aka extra fiber) with a creamy center.
· It just seems unfair to stuff your face with a burger without a huge side of chips or fries. But if you want to stay hotties, follow our advice and use tasty veggies like sweet potatoes and kale instead of the usual greased out potatoes. By lightly coating these veg with olive oil and various seasonings, you are getting a delicious salty snack while saving calories, adding vitamins, and looking like you know your way around a kitchen.
