Time for Dessert! FroYo Sandwiches and Strawberries

Frozen Yogurt Sandwiches

Servings: 40

Serving Size: 1 sandwich

Yield: 40 frozen yogurt sandwiches

1 cup whole wheat pastry flour

1 cup all purpose flour

1 cup cocoa powder

0.5 t baking soda

0.5 t salt

1.5 c packed brown sugar

1 cup granulated sugar

12 T cold chopped unsalted butter

2 large egg whites

2 t vanilla extract

Pints of chocolate, vanilla, and coffee nonfat frozen yogurt

  1. Preheat the oven to 350 degrees.
  2. Line two large baking sheets with parchment paper.
  3. In a large bowl, whisk together pastry flour, all purpose flour, cocoa powder, baking soda, and salt.
  4. Using an electric mixer on medium speed, cream the brown sugar, granulated sugar, and butter together.
  5. Add the large egg whites one at a time on low speed into the mixer. Then add the vanilla extract.
  6. Bake the cookies for approx 10 minutes or until firm around the edges.  Let cookies cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
  7. When cookies are completely cooled, sandwich 1 scoop of frozen yogurt between 2 cookies.
  8. Place cookies on a parchment paper lined pan in the freezer until served.

Dark Chocolate Covered Strawberries with Citrus Sugar

Servings:40

Serving Size:1 strawberry

Yield: 40 strawberries

20 large strawberries

11.5 oz dark chocolate chips

0.5 t lemon zest

0.5 t orange zest

4 T of granulated sugar

  1. Mix orange and lemon zest with granulated sugar in a small bowl.
  2. Line a 9x13 inch pan with parchment paper.
  3. Pour dark chocolate chips into a microwave safe bowl.  Microwave on high for 10 seconds and stir dark chocolate. Continue to microwave for 10 seconds and stir, until chocolate is melted.
  4.  Wash and dry strawberries.
  5. Dip strawberries into melted chocolate and then sprinkle citrus sugar on top.  Lay chocolate dipped strawberry on parchment paper to dry.  Repeat with rest of the strawberries.
  6. Refrigerate until served.
