
Frozen Yogurt Sandwiches

Yield: 40 frozen yogurt sandwiches
1 cup whole wheat pastry flour
1 cup all purpose flour
1 cup cocoa powder
0.5 t baking soda
0.5 t salt
1.5 c packed brown sugar
1 cup granulated sugar
12 T cold chopped unsalted butter
2 large egg whites
2 t vanilla extract
Pints of chocolate, vanilla, and coffee nonfat frozen yogurt
- Preheat the oven to 350 degrees.
- Line two large baking sheets with parchment paper.
- In a large bowl, whisk together pastry flour, all purpose flour, cocoa powder, baking soda, and salt.
- Using an electric mixer on medium speed, cream the brown sugar, granulated sugar, and butter together.
- Add the large egg whites one at a time on low speed into the mixer. Then add the vanilla extract.
- Bake the cookies for approx 10 minutes or until firm around the edges. Let cookies cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
- When cookies are completely cooled, sandwich 1 scoop of frozen yogurt between 2 cookies.
- Place cookies on a parchment paper lined pan in the freezer until served.

Dark Chocolate Covered Strawberries with Citrus Sugar

Yield: 40 strawberries
20 large strawberries
11.5 oz dark chocolate chips
0.5 t lemon zest
0.5 t orange zest
4 T of granulated sugar
- Mix orange and lemon zest with granulated sugar in a small bowl.
- Line a 9x13 inch pan with parchment paper.
- Pour dark chocolate chips into a microwave safe bowl. Microwave on high for 10 seconds and stir dark chocolate. Continue to microwave for 10 seconds and stir, until chocolate is melted.
- Wash and dry strawberries.
- Dip strawberries into melted chocolate and then sprinkle citrus sugar on top. Lay chocolate dipped strawberry on parchment paper to dry. Repeat with rest of the strawberries.
- Refrigerate until served.
